Have you checked your thermostat ?
We had similar issues in our car and the thermostat had failed, despite being a new one.....
I have had some sort of chemical test through my radiator to detect any combustion gasses in it but it came up negative, and there is no watery residue on the oil cap, but I have noticed the 1j overheating a lot, was missing a hell of a lot of coolant today and topping it up fixed that... But under boost tonight it jumped passed mid temp again but cooled back down. Now I am aware of a leak on one of the turbo water lines I am repairing tomorrow, it sprays out a fair bit of water but could that be the issue for such a big amount of coolant loss?

If its spraying the water out as you say it will go through quite a bit of water especilly when its under pressure, fix the leak as i'm sure you are going to do & see how it goes & hopefully you havent done any long term damage to the motor running it Hot & low on water ..
Does it perform well or is the car a bit sluggish ? if its sluggish you could have a knock sensor issue etc which will make the car go into limp mode which retards the timing & will cause it to run hotter too ..
Don't think it's the thermostat as the missing water was problematic, yeah I fixed the hosing today but ill need to redo it as the rubber hosing I bought isn't exactly flexible and is a little kinky.
