Ok, The Carbies need to be running at 2.8 - 2.3 PSI !
Its been said a few time but the very next thing you need to do is check your fuel pressure just before it enters the carby. Buy an inline guage if you want but cheap guages can give poor results so I recommned seeing if your "mechanic" has a good quality fuel pressure guage that can accuratly measure carby level fuel pressures. (Ideally you want a gauge that only reads to about 10psi so you get a really accurate reading)
If the pump is running more then that it is almost deffinatly your problem.
DO NOT ditch the pierburg pump ! it is perfect for the job ! What you do need tho is an inline fuel pressure regulator. I will check the 2TG storage lockers at my mums. I am sure I have one I can send you. Fit it inline and set the fuel pressure
If it would me I would capitalise on your being a female and call your mechanic, ask what fuel pressure your car has been tuned at. Since they diagnosed the problem and then charged you for a rebuild and tune they should know

When they dont know and you can show them they stuffed up is when your boyfriend actually does become useful by gently suggesting the fit the reg I can send you. Set your base pressure and retune your carbies at no charge.
