Joel, having wandered around the paddock at the Noosa hillclimb recently, i think what you're proposing to do is commonly done in hillclimb specials and sprint cars... but with a solid chunk of alloy or steel.
I'd suggest starting out with a thick slab and only mill down the areas where the caliper mounts sit
