Let me save you from the otherwise useless information provided above.

The water temp gauge is reading fine.

However, 110 degrees is pretty hot for a 1g, however you are probably in a pretty hot area of the world.

Under pressure water boils at a higher temperature, and given the fact that it's got additives (I'm assuming you've got coolant in there) the boiling temperature gets even higher.

My gauge tended to read 80 to 100 degrees, and it peaked to 110 in traffic, and even once pushed to 115~120 when I was stuck in traffic and it was a very hot day.

Other than that, if you hover between 100 to 110, then you're probably fine.

you should alos have the thermo fans cutting in and out round about the 85-95 degree temp range....providing they are working fine,

as stated above, with coolant aditives and pressure, you riase the biloing point significantly....

before changing the thermostat to something lower, id be looking at getting the radiator flushed, and give your cooling system a good clean out.
coolant+water should boil at somewhere around 130 degrees celcius depending on the mixture.
is it standard? do you have a fan?

if your having serious heating probs, remove the thermostat completely, to open up flow...but recomend replace it with a newer lower temp setting....

i dont run a themostat....as ive got a davies craig electric water pump....

around 85-90 should be right with an 82 degree thermostat. i was running an 87 thermostat and it would boil itself, the hotter ones let the motor heat soak and it cant cool its self
what car is this in? im thinking your radiator is too small.
these motors make ALOT of heat, you need a big, efficient radiator.

If your running coolant in the system the boiling point will actually be LOWER !

Average mix of coolant raises the boiling point by 10 degrees C,
it also reduces the freezing point by about 40 degrees C.

Well in straight out terms anti-freeze will slightly raises the boiling point of water YES although glycol antifreeze additives will basically halve the heat transfer properties of say 100% water in the system.
