You probably won't see the LED turning offthe switching time would be in the order of tens of milli seconds.
The pump should have enough mechanical inertia to run through the switchover anyway...

perhaps you could wire an LED from the fuel pumps power to ground... so that you can see whenever the pump has power...
that way, if it is momentarily dieing as it switches over, you will see it...
fuel pump momentarily losing power might do it.... but it should take a few seconds for the fuel pressure to decrease anyway...
it sounds like poor tuning... but ya never knowfuel pump voltage mod sounds cheaper and easier to try first
