I really think you already answered your own question with the first post, if you want something reliable for your son it's gotta be efi. Yes a set of carbs will sound wonderful and if correctly sized and tuned will potentially make more power than a standard efi setup. But, if I were in your shoes I'd be on the hunt for a rusted out AE82 twincam to use as a donor for all the efi hardware and wiring. If you're going to spend the time fixing up the thing so it's a tidy piece of kit he can jump in and drive every day, there's no point in damning the slight amount of extra effort to make it as easy to drive as a factory built car.
