I'm going to say black. Silver gets dirty too quick and to be honest I'm not a huge fan. Gunmetal while nice in isolation offers no contrast with the colour of your car, and will make them look cast.

now next question: does anyone have special tips on how to remove high temp paint? this stuff is thick and sticky (it hasn't been cured yet), and generally had a cheap paint job done on it
Don't bother. Stick it in an oven and heat it up. Rub back whatever is left to give the new paint something to bite to and just leave it.
Saving that, you could use paint stripper on it, but then you'll have to be careful you don't damage the alloy.

probably stating the obvious, but those "one man" bleeder kits with the bottle and magnet are the obsolute must have shit when bleeding a dry system.
you hook the line on, with the bottle which has one way valve in the lid, and has about 30cm of clear line and then stick the bottle onto the rotor using the magnet above the height of the bleeder valve. then you just fill up and pump away, clear line lets you see all air bubble are out and your pump clean fluid... and with the bottle on the end its no mess
they are about $20 for a high grade kit with bottle, ive seen cheapass ones for like $5 but they dont have the bottle

Just get a one-man bleeder, they work fine. Either that, or gravity feed them, use google.
I dont think polishing would work very well, it'd be a lot easier to maintain a painted surface than a polished one when it comes to brake dust!
