and as far as damaging the interior paint, why are you worried? its all covered up! As soon as you are finished letting it cool, just whack some rust proof paint from bunnings on there. (white night i used on my towbar - works great in a spray can) you will not have any corrosion problems whatsoever.

whats the possibility of removing the tank tubbing then re installing?
Unfortunately it's not a great possibilty, but might be something I can consider. The guy I'm doing it with is a fire fighter and he seems to think that it's not anything to worry about.. But, I'm still not so game

dependant on where it is, it might be easier/better to make a cut with a angle grinder, and try to square off the arch with a hammer (if thats where its hitting) and then weld in some plate in the gap you create.
Try spacing the wheel out with washers or similar to see how much room you need, at least then you will know if the tyres can actually physically fit in there. If they do clear ok then you can look at either new wheels or even a spacer with longer studs. (No this isn't dodgy, it is actually quite common for race cars to do this and obviously slicks will only be for track use.)

strad - dude you seriously wont have any problems. As i mentioned, if you are worried, remove the tank, plug the lines/ let the gas out and then go hell blazers. Then you know you Definetly wont have any issues....
Yeah, grinding in the area with the LPG tank may not be so great either.. Well, it'll be looked into by this time next week, so I"ll take it from there.
It may be that I get the guards heavily lipped and then plug away underneath with a hammer and oxy or something. I dunno yet. Just gotta get it done.
