Best way to split a wire two ways

These things (and similar) work brilliantly... (plus I have some if you need them)

Place end of wire in one side, place wire you wish to join it to in the other side, and close...

No cutting, soldering, protecting, etc...

They work well as long as they are the correct size for the wire...

IDC (insulation displacement connectors) work well in some situations - virtually all flat computer cables are IDC.
Where IDC fails is with high currents because the contact portion is relatively small.
My experience with the jaycar style IDC connectors is opposite - I don't like them and I remove them when I come across them. I wouldn't use them for critical circuits, but that's just me

If so then I agree with you, I'm not a fan of the Jaycar ones... Narva make a much better version IMO...

I'm with Mos for the most part. If I want to pull things apart, I crimp them. If I want them in a loom, I twist, solder and heatshrink them. The main problem with the solder joints is vibration, but if there is no tension on them, there should be no problem. As such, I just make sure there is enough slack on the wiring.

If you can solder well and have a proper soldering iron, when I join 3 wires I use either of these methods:

1) Strip one wire in middle (without cutting), twist wire, tine, loosesly spiral wrap other wire's stripped end around 1st wire (so there are gaps between coils), solder, electrical tape.
Disadvantage with this is that is is more effort to strip a wire without cutting it.

2) Strip all wires, tin one, carefully spiral both of the other wires around as per 1) then sodler & heatshrink.

I hate the dodgy common type of crimp on connectors with (red, blue, yellow) but the ones pictured by 7M-GTE MX73 are a nice way to do it. I'd use the first part of the crimp on the insulator but solder the innermost part of the crimp.
