white wire is usually the earth line for the VR signal.... but i cant be sure with the 2JZ (having never wired one up).
If you wire it up with white as negative, the standard toyota convention is falling edge

Sorry - i forgot to add that you will definitely want to extend the shielding if you need to extend the wires. I have used 2-core microphone cable in the past with great success (my 18RG currently uses 2-core mic cable for the whole lenght of the VR wiring)

I have some spare shielded cable from the second unused cam sensor, so I'll just use that. Any tips for joining shielded cables together?

-join inner trace(s)
-cover that join with heat-shrink (which you should have had on the cable before soldering)
-twist up and join the shield at a single point
-cover join with heat-shrink but leave braiding exposed at both sides of join
-wrap with a section of braid from another shielded cable (e.g. USB or coax cable?) from one braided side to another and make small solder join at each end
-cover all with another layer of heatshrink
-do skids
now the core and shield is well connected plus the shield is intact.
