I've been told stories of a 2T motor used in a sprint car:
- high compression 12.1, sleved to decrease the bore size i think around 84mm as they have strict guidelines to follow in that class ie: must be less than 1578cc (or something like that)
- roller rockers with needle bearings
- gear drive that replaces the lower timing chain
- windage tray
- double valve springs
- hardened push rods
- forged combinations
im sure theres more
yes there are off the shelf parts for the 2T, one of my plans where to build a tough 2 liter 2T in sleeper form.
there are also:

Billet Main Caps
Pulleys
what you have mentioned above is a good start "i was thinking a cam, extractors, better carby". you may also want to look in porting the head and boring the block for some gains.
btw what form of racing are you planing on doing drag/circuit?
