are you 100% positive that the timing is correct ; if you've done the head gasket then the timing belt would have had to have come off....thus when it was all put together this could be causing issues with it not starting/not revving properly. double check that the dimples on the cam gears line up correctly at TDC with the back of the cover?...
the symptoms of what you're describing sound like incorrect timing mate thats all. I've done exactly this with a 4AGE
