how about using a DAVIES CRAIG thermo switch? adjustable, so you can set it to your temp,
just slip the brass sender in the top hose...... $80 from autone/repco,

Quite a few years ago I had a 180sx with an RB20DET (Boo Hiss). To control the thermo fans I had a boss welded into the thermostat housing. I had this done at ARE and they also supplied a temperature switch, from memory it was a relatively low temp switch due to it being in there. It ended up looking very neat due to being tucked away.

The chunky switch block tucked away in the bottom hose is usually hard to see and will only have a small amount actually visible outside the hose.
The extremely ugly and big and poo thermostats are something like 30's oven technology that, while possibly reliably simple, are far from an advanced or elegant solution.
Everything is about compromises and the inline switch fitting is, IMO, a much better compromise. (If you don't want to compromise get one fitted to the bottom of the radiator).
