I'm wondering if I can use the stock pistons (with new rings) in my engine build (not chasing big power ~250-300rwkw so i'm not inclined to lash out on forgies unless I have to). I purchased the long engine with a 1.2mm cometic MLS HG thrown in, but am unsure if after i've had the the head and block skimmed over whether I would need to offset the reduction in volume with oversized pistons? Could I have it machined just enough to make the surface finish right for the HG, without effecting the volume too much?

That sort of power is fine on stock pistons with a good tune.
If the stock pistons will work will be up to your machinist. When the block is decked they need to assess the bore, hone it or oversize it and if required then you will need new pistons to suit
