Step 1. buy a fuggin multimeter with continuity buzzer
Step 2. Test wires from ECU end to various plug ends and label plugs accordingly
Step 3. Give me my spoon back
Step 4. ????
Step 5. Profit.
If you can't find a wiring diagram, trace it out. It really isn't too hard once you have an understand ANY wiring diagram.
Just find which wires go from which sensors to the ECU. Or match wire colours with plugs and pins. It can take some time, but it isn't hard. Also I'd agree with The Witzmeister that you most likely have all the info you need in your possession already.

Could it be that this car was a conversion to begin with? could be that they had a custom loom made up? So yeah your gonna have to trace back the wires. It gonna be a pain but it should be worth it once its up and running!
it's not a pain, it's something you should do with every wiring job.
It's called being thorough.
