Does the head unit have a wire to connect to a lights circuit so it dims/brightens when the headlights are turned on/off? A few times i've put HU in newer cars I always cause this sort of problem from connecting it to the wrong place!
Try disconnecting that wire and see if it makes a difference, or keeps blowing the fuse!
If you have tapped into the light for the ash tray it could be incorrect and earthing through there.

A common mistake is to use one of the dash lights as a ground (as this tests like a ground when the lights are turned off).

Replace the fuse and disconnect the stereo. And make sure the lights still work.

Check the wire that the stereo was grounded to to make sure it is at ground and not 12V.

Ground the stereo to the body itself and then retest.

if the car has a dimmer light switch on the dash board, you may have left it unplugged when you put the dash panel back on. this will stop the dash lights working.
