I used the VL turbo disks for the bigger size, as for the caliper, whatever you want.
You can buy them as blanks so you can put celica stud patturn on it, or better still get your back to 5 stud, many many wheels to suit commo's out there.
Apparently later-model Commodore discs fit on VL's, so if VL discs work you could just as easily use the bigger discs from a VT HSV or something.

I think pov pack (and v8's i think) vn, vp. vr and prob vs are the same size as the VL turbo ones.
Im not sure on the HSV models, i try to avoid knowing too much about holdens.
