Depending on which model.
If they are the ones that have the intergral choke/jet cover typically off 18R-Gs then the build kit may not contain this cover gasket so try to save it.
If they have never been touched before you may find some screws and things are either very tight or break or get damaged when taking them out.
Ok when taking apart and in no particular order.
1) Remove everything you can including the throttle shaft and plates.
2) Make sure you don't loose the small ball bearings used in the pump circuit when you take the top off and turn the unit upside down.
3) Check the inner venturis for wear or damage.
4) Check the pump jets as you take them out making sure they have been installed correctly last time. There is a "D" shape to point them the right way and that the old washer/seal is removed. There should be a new washer/seal in the kit.
5) Blow out all the passage ways.
6) Check the idle mixture screws. The taper can be recovered by placing in a drill press chuck and using a file. If a tip is broken off then it is most likely stuck in the body of the carby.
7) Check the "O" ring seals on the bottom of the jet block.
Somethings when putting back together in no order.
8) Install the throttle plates and shaft and check for twist by lining the plates up with the pilot jet holes. The shaft can be twisted back into place. Use Loctite for the screws.
9) The inner venturi locating screws need to be firm but not over tightened.
10) The pump jet lever needs to have around 6mm of travel and can be adjusted.
11) Install the main jet onto the emulsion tube, install and tighten this into jet block and then install the top main air jet.
12) OEM float level is 12mm from bottom of main cover to the top corner of the float, when resting against the fuel inlet valve.
13) Start with 1.5 turns out from closed, on the idle mixture screw when re-installed.

Just work carefully as you take them apart and you will soon learn how it all goes back together.
