RIM and TYRE sizes on Z20 Soarer

Hi Guys,
rims and tyres are not my strong point. I was wondering if someone on here could help me out.
Currently have a set of rims, I think they are 17x7 and at the moment im running 215 45 17 achilles on the front and i think 235 35 17 on the rear.

I am planning on stepping up to a new set of rims eventually and not much nice stuff comes in a 17x7 its ususally at a minimum 17x8 or then up to an 18 inch rim.

Can someone tell me what tyre size they would recommend on a 17x8? I dont want that stretched look so I presume ill need bigger tyres. But any suggestions would help for front and back.

Also if I jumped up a size to a 18 inch rim, what tyre and profile would I need to keep the speedo roughly the same?
