most probably its the idle air control valve.
while the engine is warming up it would probably hold the RPM higher. most cars do, once the ECU detects that the engine temp is at oprating temp, it would stop the cold start cycle and default back to idle RPM.
if the idle control motor is faulty or dirty it may not work correctly and hense the stalling.
I would remove the idle control and clean it. Refit it and see how that goes for you.
